Easy-to-Make Decadent Chocolate Cake

While I'm still in the writing cave, Kelli has graciously sent me a delicious recipe for chocolate cake to share with you. Happy baking! Darlene

Easy-to-Make Decadent Chocolate Cake
(From the kitchen of Kelli A. Wilkins)

This is the best made from scratch chocolate cake I’ve ever had! It’s moist, easy to make, and the coffee brings out the chocolate flavor.

Ingredients
2 cups all-purpose flour
2 cups white sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 pinch salt
1 cup milk
½ cup vegetable oil
1 teaspoon vanilla extract
1 cup hot, brewed coffee
2 eggs

Directions
In a large bowl, sift together flour, sugar, cocoa, baking powder, soda, and salt.
Add oil, milk, vanilla, coffee, and eggs; beat well. Batter will be thin.
Pour into two 9-inch greased and floured round pans.
Bake at 325 degrees F for 25 minutes, or when top springs back when done.
Cool layers on wire racks.
When cool, place bottom layer of cake on a plate, frost (or fill), then add the second layer on top.

Toppings & Other Suggestions
This cake pairs well with cream cheese icing, vanilla icing, or you can frost it with whipped cream. Of course, it can be served with ice cream (vanilla or mint are recommended). You can also add fruit (cherry or strawberry pie filling) or pudding between the layers, then frost.
